Yay for a great time with great friends on my 26th birthday!!
I served this dish with organic Fusilli and a side of broccolini. Made by Jen!
Makes 4 servings
4 (4-ounce) trimmed boneless, skinless chicken breasts
Olive oil in a sprayer (not store-bought spray that contains propellant) (I just used a teaspoon or so of olive oil per piece of chicken)
Salt, to taste
Ground black pepper, to taste
1/2 cup low-fat, low-sodium, low-sugar marinara sauce, or more to taste
6 tablespoons finely shredded low-fat mozzarella cheese
2 teaspoons grated reduced-fat Parmesan cheesePreheat the oven to 350 degrees F.

Lightly Mist both sides of the chicken with olive oil and season with salt and pepper. Grill the chicken, turning once, for 3 to 5 minutes per side, or until it is no longer pink inside and juices run clear. Transfer to a baking dish.
Heat the sauce on low in the microwave until warm. Top each breast with 2 tablespoons marinara sauce, followed by 1 1/2 tablespoons mozzarella, and 1/2 teaspoon Parmesan. Bake the chicken for 3 to 5 minutes, or just until the cheese is melted.

Taaaa-daaa!! All done and delicious!!! The chicken tasted great and I was full after one helping!! Will definitely be making this one again.

True Story! I wish coffee did the same thing.
Totally wish coffee did the same things!! So I find out that after 26 years of sustaining the same not very good for me diet without any major weight gain or health problems the 2 bowls of ice cream I would consumer every night after dinner as kid, the millions of cookies I eaten, the endless amount of coffee bean ice blended mochas I drank throughout college, and the relative lack of veggies and fruit has finally caught up with me. So, now the only thing left to do so I no longer live in uncomfortable pain everyday is to do a diet makeover. Step #1 cut back on coffee….WHAT?? and manage to get through my day?!?!?! It’s gunna be a long road folks, a long road!!!!!
